Freezer Corn 2015

Since the kiddos are away for the week, and the large patch of sweet corn is at its prime, I thought I would put some in the freezer!  Doug was kind enough to pick about 13 dozen ears for me.  We worked last night to get it all shucked, and I started on it first thing this morning.
I had quite the assembly line...the ears on the dish drain are waiting their turn to be blanched, two pots on the stove to blanch, and two sinks to cool them off!
After everything was blanched and cooled, I set to cutting it off the ears.  Unfortunately, I didn't remember that my electric knife died last year (or maybe the year before), until I was looking for it to start this step.
After taking a lunch break, I bagged up all the goodness.  When it was all said and done, I ended up with 22 bags!

How Sweet it Is

Daddy brought home the first ripe ears of sweet corn tonight!  When I got the text that said he was bringing it home, I quickly changed the menu for supper.  You GOT to have BLT's with sweet corn; and as luck would have it, I had picked a few red tomatoes from the garden a couple nights ago!

This was Sugar's first time with the delicacy.
She wasn't sure what to do at first, but after watching her brother and sister...she quickly understood.
After supper, we all sat down to break the first picking of green beans!
Notice the little one "behind" the bucket?  Yep, she's eating the beans and not really breaking...

Weekend Project

Doug brought home a decent pile of sweet corn on Friday, and even better, he was home and able to help me put it in the freezer!

Sweet Corn 2014

My friend, Missy, once wrote on her blog that she was told to take a picture each summer of her kiddos eating sweet corn.  I thought it seemed liked a great idea, so I have been trying my best to do it as well.

Glimpse into my Garden Galley

Here are some snapshots of what's been going on in (and out of) my kitchen lately...

The kiddos loved helping shuck the sweet corn

...makes 7 Quarts of Dill Pickles! (that puts me up to 21 Quarts for the season thus far)

My first 3 loaves of zucchini bread
I was able to make 4 more loaves from what remained of those 2 zucchinis!...my chickens need to start picking up their production rate so I can bake some more yummy-ness :)

Sweet Corn!

I had a busy day...it started last night when Doug and I picked over 10 dozen ears of sweet corn Then, Doug helped shuck a couple dozen ears before leaving for work, I finished shucking the rest before Reba got up

I filled up a couple trash bags with the husks
I then had to take a break to feed Reba and find her some toys
Then, the ears were ready for a washing
Next, came the blanching and cooling
Yes, I had corn everywhere!
It was then time for lunch, so I took another break. Reba then chilled in her highchair for a while
Reba went down for a nap, so I got busy cutting the corn off the cobs
My weapon of choice for cutting off the corn - my electric knife!
Look at all that beautiful corn
Now, what to do with those empty cobs...they'll wait until Doug gets off work :)
Finally, it was time to back and seal up the sweetness!
When it was all done, I had 17 bags of corn to put in the freezer. Yumm-o!
Whew, that wore me out ... how about you?

This and That

As you know, I have been busy canning various veggies from the garden. I use the box in the picture to carry jars up from the basement and back down when they are filled. Dallas, on the other hand, thought the box was for him to play in! He likes it much better than the laundry basket because he can get in and out much easier.
On Wednesday night, we had corn on the cob with supper. We also had it Monday night, but Dallas was not in the mood to eat and would not touch his ear. It took him a while to try it on Wednesday, but once he got that first bite over with...
Well, he cleaned his ear and sucked every bit of juice out of the cob!
